One of my favorite parts of being the operations manager here at Dam Good™ English Muffins is that I am at the forefront of collaborating with other like-minded brands. In this case, we were approached by the lovely team over at Hudson Valley Fisheries to work on a project with them, and in exchange for sending them some of our vegan sourdough English muffins, they sent us a bunch of goodies, including the fantastic Applewood Hot Smoked Steelhead Trout that we used for this Smoked Steelhead Toast recipe.

Hudson Valley Fisheries applewood hot-smoked Steelhead trout is kippered style, smoked in small batches at family-owned smokehouse, Samaki, located in the Hudson Valley. "Hot" refers to the high temperature at which it is smoked (145 degrees), not the flavor profile! It is super flakey with a decadent texture and contains no hormones, antibiotics or artificial dyes.
Similar to our gourmet English muffins, their Applewood Hot Smoked Steelhead is really versatile. In addition to making it the perfect addition to your morning or afternoon toast, it can also be added into a pasta dish, grain bowl, on top of a salad, or enjoyed alone!
What to do:
Since one of my favorite ways to enjoy smoked fish on toast, I layered some whipped cream cheese on top of a toasty "Whole Wheat" English muffin and put some micro greens on top of the fish to add a little crunch.
This recipe is simple, quick, hearty, and packed with protein!
